DIY/Sharing platter: Falafel, hummus and tortillas

One can of chickpeas, 6 tortillas, a blender and roasting pan are the top/main items you need to prepare this feast. This was shared among 2 adults and one child. I know the amount of paprika might look a bit shocking but I kept the hummus and falafel slightly less spicy than usual. I did sprinkle a pinch of paprika as Tara wanted “red on her pizza”.

Step one: Rinse a can of chickpeas (250g drained) in water and divide into two parts.

For hummus, blend together:

1. 125 grams chickpeas

2. 2 tbsp tahini

3. A clove of garlic

4. A small piece of chilli, optional

5. 1 tsp cumin powder

6. Salt to taste

For falafels:

Blend together the following, roll into balls, coat with bread crumbs, drizzle some oil and bake at 180 degrees Celsius for 15-20 minutes/until golden:

1. 125 grams of chickpeas

2. A piece of chilli, optional

3. 1/4 cup of chopped parsley

4. A clove of garlic

5. 1 tbsp cumin powder

6. 1 small red onion

7. Few sprigs of fresh coriander


Heat them in the roasting pan for 5-10 minutes before serving.

How I served to Tara: I spread some hummus for her on tortilla, topped it with falafel pieces, olives and some paprika.
