Toddler’s Ultimate Nachos Plate

If there’s one thing that I indulge after Tara sleeps (sometimes I eagerly wait for her to fall asleep 🤪) it’s my nachos bowl!

I load my nachos with chillies (I’m talking about 1/2 bottle of hot chilli flakes) so I make sure Tara is not in the vicinity 🤪. Then came the thought of why not make everything from scratch and make a kid friendly one that we can both enjoy while watching Finding Dory.

Here it is:

1. Nachos made using 3 ingredients dough – spelt flour, plain flour and yoghurt. Served with cheese hearts for that bit of cuteness.

2. Simple roast and blend sauce of tomato and red pepper.

3. Avocado and corn salsa sprinkled with lemon juice and paprika (avoid paprika and remember to squish cooked corn kernels and chop avocado in fingers for younger babies).

4. Peppers stuffed with cream cheese and topped with chia seeds (for younger babies, cut peppers into boats or fingers so that it’s easy for their adorable little fingers to hold and eat plus avoid risk of choking).

Recipe for Nachos

Prepare a dough with 2 parts of flour and 1 part yoghurt. I usually use plain flour but this time I added half plain flour and half spelt flour, it tastes delicious and it’s healthier too. Knead the dough with your hand and make sure it’s non sticky.

Roll the dough on a floured surface and cut into wide strips. Cut triangles on each strip and arrange on a baking tray.

Brush each piece with olive oil and sprinkle some dried oregano. Bake in a preheated oven at 180 degrees Celsius for 10 minutes or until slightly golden on top.

Roast and blend tomato and pepper sauce

As the same suggests, roast a tomato and red pepper in the oven at 200 degrees Celsius for 15 minutes. Discard the skin and blend into a purée.

Give it a boil and mix in some dried oregano.

Avocado and corn salsa

Simply mix chopped avocado and steamed corn kernels in a bowl with fresh coriander leaves and a bit of paprika. Drizzle some lemon juice for that extra burst of freshness.

Cheese stuffed peppers

I picked up some adorable little mini peppers from Aldi and they came in handy to make these cute cream cheese filled circles.

Remove the top of peppers, gently put the knife into peppers, remove and discard all the seeds. Stuff these peppers with cream cheese.

Gently cut them into pieces and top with chia seeds.

Love the idea of this nachos bowl? We had a great time relishing it while watching Finding Dory movie ❤️.
