Pizza with Fries and Passion Fruit Yoghurt
The lesson I learnt is: red colour peppa pig shaped pizza is unacceptable because peppa is pink! It was too complicated and we were all famished so I went with the safest shape – a duckie.
We went for a long evening walk to enjoy the sunshine and came back later than planned. I had to make something super quick. It’s basically a result of hungry girl + pressure to use up leftover mascarpone.
Pizza dough:
For pizza dough, mix 2 parts of plain flour, baking powder and 1 part Greek yoghurt and knead to make a non sticky dough. I added dried Italian herbs to the dough, for a change ! Divide the dough into balls and flatten on a floured surface.
For the sauce:
Mix together and spread on the base:
- 3 tbsp tomato paste
- 4 tbsp mascarpone. Omit this if you have cheese for topping. Alternative: cream cheese
- 1 plum tomato from a can, mashed. Alternative: 1additional tbsp tomato paste plus water
- Garlic powder
- Few chopped basil leaves
- 2 tbsp water
Toppings:
Mushroom and corn.
Temperature:
Preheat and bake at 200 degrees Celsius for 10-15 minutes or until done.
