Pesto and Cheese Toast Roll-ups

Trust me when I say this ! Roll-ups are a really fun way to serve bread with a filling inside, plus it’s very easy to make !

I made this using homemade pesto. This time, I made a nut free version for a change ! For homemade pesto, blend together:

  1. 1 cup basil leaves along with stalks
  2. 1 clove of garlic
  3. 1-2 tbsp olive oil
  4. A small green chilli
  5. Pinch of salt
  6. 3 tbsp mixed seeds. I used ready milled mixed seeds from a brand called Yum and Yay.
  7. 2 tbsp grated cheese. I used regular cheddar. I don’t use parmesan because it’s not a vegetarian cheese.

In case you don’t want to go with basil, you can use Indian coriander chutney too! My go to recipe is blending together:

  1. 1 cup coriander
  2. 1 small green chilli
  3. 1 clove of garlic
  4. Salt to taste
  5. Few mint leaves, optional
  6. 3 tbsp mixed seeds. You can use a mix of sunflower and pumpkin seeds.

How to make roll ups:


  1. 2 slices of bread
  2. 2-3 tbsp of chutney or pesto
  3. 2 slices of cheese
  4. Butter to toast


  1. Chop the edges of bread. Using a rolling pin, gently flatten the bread.
  2. Spread some pesto or chutney on the bread and place a slice of cheese.
  3. Gently roll it up together and seal the ends with some water.
  4. Heat butter in a pan and gently toast the roll ups until bread is golden and cheese melts.
