Beetroot and Cumin Overnight Oats

Look at that gorgeous pink colour! I can guarantee that it tastes as good as it looks. Including beetroots in Tara’s diet was a big challenge because she simply hates it ! Wish I thought of making this overnight oats earlier as they went down a treat ! I made it savoury by adding ground cumin but that’s totally optional!


Mix the following ingredients together and refrigerate it overnight to relish the next morning:

  1. 1/2 cup oats
  2. 1/4 cup finely grated beetroot. I used fresh organic tender beetroot so I didn’t cook it. You can use use cooked beetroot too.
  3. 1/2 cup Greek yoghurt
  4. 1/4 cup water or milk. I used water.
  5. Salt to taste
  6. 1/2 tsp ground cumin, optional.
  7. Spring onions.
