Eggless Blueberry and Lemon Panckes
We are people who never say no to pancakes. This is the first time I made pancakes with lemon zest and they tasted fresh and delicious.
Ingredients:
- 1 cup flour
- 1 cup milk
- 1 tsp baking powder
- 1 tbsp lemon zest
- 2 tbsp flaxmeal
- Pinch of baking soda
- Handful of blueberries
- 1 tbsp melted butter
- 1 tsp vanilla
- Butter for shallow fry
- Maple syrup and more butter to serve
Method:
- Mix all the ingredients from 1 to 10 to make a nice and lump free batter.
- Let the batter rest for 15 minutes.
- Shallow fry each ladleful or batter with butter and serve with maple syrup and more butter (optional).
