Eggless Blueberry and Lemon Panckes

We are people who never say no to pancakes. This is the first time I made pancakes with lemon zest and they tasted fresh and delicious.

Ingredients:

  1. 1 cup flour
  2. 1 cup milk
  3. 1 tsp baking powder
  4. 1 tbsp lemon zest
  5. 2 tbsp flaxmeal
  6. Pinch of baking soda
  7. Handful of blueberries
  8. 1 tbsp melted butter
  9. 1 tsp vanilla
  10. Butter for shallow fry
  11. Maple syrup and more butter to serve

Method:

  1. Mix all the ingredients from 1 to 10 to make a nice and lump free batter.
  2. Let the batter rest for 15 minutes.
  3. Shallow fry each ladleful or batter with butter and serve with maple syrup and more butter (optional).
