Healthier Pinwheels

Pinwheels are always a huge hit in my house. So last night I made a really healthy batch to get in more veggies in Taraโ€™s yummy. .


For pesto, blitz together:

1. 1 cup basil

2. 1 clove garlic

3. 1/2 cup cooked broccoli

4. 1/4 cup kale

5. 1/4 cup spinach

6. 1 tbsp olive oil .


1. Spread pesto generously on a sheet of puff pastry.

2. Sprinkle 1/2 cup of finely chopped red, orange and yellow peppers.

3. Generously spread 3/4 cup cheese on top. I used a mix of mature cheddar and Red Leicester.

4. Sprinkle chia seeds and help harts, roll it up and cut into pieces and bake at 170 degrees for 15 minutes or until golden.
