Spaghetti with Oven Baked Veggies in Creamy Pesto and Goats Cheese
Lasts night’s dinner and I’m going to make it tonight too! I’m a huge fan of roasted veggies for dinner. I mixed in some homemade pesto to the roasted veggies and served it with some spaghetti to Tara. It was pretty messy but a big hit with Tara and the adults.
Recipe for homemade pesto:
Blitz together:
1. 1 cup of basil
2. A few sprigs of mint, optional
3. 2 tbsp olive oil
4. 4 tbsp cream
5. 1/4 cup almonds or any nut of your choice
6. A clove of garlic
Recipe for oven roasted veggies:
Chop veggies of your choice (I used courgette, red and yellow peppers, onion, cauliflower and broccoli) and drizzle some olive oil on top. Bake at 190 degree Celsius until golden. Once baked, add salt.
Arrangement:
1. Mix pesto with the baked veggies.
2. Place some cooked pasta on a plate, top it with the veggies and add some goats cheese (or cheese of your choice) and serve warm.
