Avocado and Red Pepper Hummus Toasties

My daughter has become a fan of avocado toasties. I made this for the adults and toddler on a Saturday when we had to go by an early morning train to some place. I added some homemade red pepper hummus just so that the toasties keep us full until we reach the destination.

Ingredients for red pepper hummus:

  1. 1 red pepper
  2. 1/4 cup chickpeas, boiled or from a can
  3. 1 tbsp olive oil
  4. 1 tbsp sesame seeds
  5. Salt to taste
  6. 1 clove of garlic

Ingredients for toasties:

  1. 2 slices of whole wheat bread
  2. A small avocado, mashed
  3. 2 tbsp red pepper hummus
  4. Butter to toast

Method for red pepper hummus:

  1. Roast red pepper in the oven for 15 minutes. Remove skin and take out the flesh.
  2. Blend it with all the ingredients listed under the section “ingredients for red pepper hummus”.

Method for toasties:

Spread red pepper hummus and smashed avocado between two slices of bread and toast with butter on a pan until.
