Pasta in Creamy Avocado Pesto Sauce
Who doesn’t like Pesto ! I love Pesto and it’s something I can eat everyday. Tara is not a huge fan of Pesto that smells only of basil. So I added some avocado and it tasted good. Not too basil-y and creamier too, just the way she likes it.
Ingredients:
- A small avocado, mashed
- 1 cup basil leaves
- 3/4 cup fresh cream
- 1/4 cup almonds, soaked in water for at least 30 minutes
- 2 tbsp olive oil
- A clove of garlic
- Paprika, optional
- 2 cups cooked pasta
Method:
- For Pesto, blend together all of the ingredients (except pasta, of course 😜).
- Boil the pesto sauce in a pan for 4-5 minutes.
- Add cooked pasta and mix everything well until combined.
- Serve hot.
