Rocky Road Cups
I was cleaning my kitchen and found some bits and opened packets of kids popcorn, dried apricots, Easter egg M & M, lotus biscuit and some cooking chocolate. What a coincidence! I decided to throw everything together and make a bowl of rocky road candy. When I made rocky road bars last time using a recipe I found on the internet, it came out really hard and all the marshmallows had melted. This time I saw Cupcake Jemma’s video and she had added golden syrup and butter to make it easy to bite.
I didn’t follow her measurements and used my own judgement, it came out fine.
Ingredients:
- 12 squares of chocolate
- 2 Lotus biscoff biscuits
- 7 M&M Easter eggs
- 2 dried apricots
- Handful of Organix kids popcorn or regular popcorn (make sure there are no corn bits)
- 1 tbsp golden syrup
- 1 tbsp butter
- Pinch of salt
- 1 tsp Sprinkles
Method:
- Heat a pan with water and place a bowl on top. Put chopped chocolates, butter and golden syrup in that bow and gently heat it until chocolate and butter melt.
- Once it slightly cools add salt roughly chopped M&M, apricot, biscuit and popcorn.
- Spoon it into mini muffin cases and add some sprinkles on top. Let it chill in the refrigerator for 2-3 hours.
- Serve and enjoy !
