Mini Pancakes
I’m slightly shy to say that we have pancakes as evening snack. I’m usually pretty bad at making pancakes because I make it just for my daughter and the internet recipes that I see usually serve 4.
I’m obviously bad at Math and I find it difficult how to reduce the quantity of eggs! Today I decided to start my pancake mix by starting with an egg and kept adding dry ingredients to it until I reached the desired consistency. I kept a count of the dry ingredients so I was able to write this recipe.
Serves 1 child her bib and a barbie.
Ingredients:
- 1 egg, separate white and yellow
- 2 tbsp plain flour
- 1 tbsp wheat flour
- Pinch of baking powder
- 1 tbsp milk (I used Innocent Oats Milk)
- Sugar, optional
- Butter to cook
Instructions:
- Beat egg white until it’s light, white, fluffy and frothy.
- To the egg yolk, add the flours, baking powder, sugar and milk and whisk well until there are no lumps.
- Fold this mix with the frothy egg whites very gently. Make sure it’s well combined but be very gentle.
- Grease a pan with butter and cook the pancakes.
- Serve with maple syrup or chocolate syrup and fruits.
